Cider
Nick and I are making cider with Damon. Two weeks ago Nick and I picked all the remaining apples off the two trees in our back yard. Damo came over and we proceed to masticate almost 5 gallons worth of apples in this crazy juicer that Damon has. After some cleaning and such, we put the juice in a five gallon glass bottle with some yeast and let it sit for a week. Nick kept catching me staring into the bottle, it pretty crazy that this stuff is alive. There is a plastic contraption at the top of the bottle that allows the brew to breathe (sort of) without getting gunk from the air in it. Damon came over and we siphoned the cider out of the old bottle into a new one (trying to dodge all the gunk and yeast). This bottle is the one you see above. The cider is a pretty intense green color. This is because we did not peel the apples. However, this does not affect the flavor, as we sampled it and dang is it tasty. In two days, we will transfer the cider into small bottles with a little bit of fresh apple juice. This will give the yeast a little more sugar to eat and this will carbonate the cider. I think we need to wait only one more week after that to drink it.
